Cheesy Mushroom Fried Eggs
These spicy yet cheesy mushroom fried eggs are perfect for breakfast, brunch, or even brinner! They deliver the right balance of soft heat and creamy flavors with no cream required.

Ingredients
- 2 tablespoons olive oil or 1-2 tbsp of butter
- 0.75 cups mushrooms sliced lengthwise
- 3 cloves garlic finely sliced
- 0.5 cups jalapeños sliced
- 0 chili flakes to taste
- 0 oregano to taste
- 0 paprika to taste
- 1 handful spinach fresh
- 2 egg
- 0.5 cups cheddar cheese grated
- 0 scallion sliced for garnish
Instructions
- Heat a generous glug of olive oil or melt 1-2 tbsp of butter in a pan or skillet over medium-high heat.
- Add 1/2 - 1 cup of sliced mushrooms to the pan. Cook until they are soft and browned.
- Stir in 3-4 cloves of finely-sliced garlic, a handful of sliced jalapeños or green chillies, and your seasonings of choice.
- Add a handful of fresh spinach or your favorite greens and stir gently until they wilt.
- Crack in 2 eggs and cover to let them cook through to your desired consistency.
- Once the eggs are almost done, grate your favorite cheese on top.
- Optionally, garnish with sliced scallions.
