Herby Chicken Meatball Bowl

Ingredients
- 1 can chickpeas drained and rinsed
- 1 tablespoon olive oil
- 0.25 cup parmesan cheese grated
- 0.5 teaspoon salt
- 2 medium sweet potatoes peeled and cubed
- 1 tablespoon olive oil
- 0.5 teaspoon salt
- 1 pound ground chicken
- 0.25 cup parsley chopped
- 1 teaspoon garlic powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 egg
- 1 tablespoon olive oil
- 0.5 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon dill chopped
- 0.25 teaspoon salt
- 2 cups kale torn into bite-sized pieces
Instructions
- Preheat your oven to 400°F (200°C). Drain and rinse the chickpeas. Pat them dry with a paper towel to ensure they roast well.
- Toss the chickpeas with olive oil, salt, and grated parmesan cheese. Spread on a baking sheet and roast for 20-25 minutes, stirring halfway through.
- Peel and cube the sweet potatoes. Toss with olive oil and salt, then spread on a baking sheet. Roast for 25-30 minutes, until tender and starting to caramelize.
- In a large bowl, mix ground chicken with chopped parsley, garlic powder, salt, pepper, and an egg. Form the mixture into small meatballs.
- In a large skillet over medium heat, cook the meatballs in olive oil until browned on both sides and cooked through, about 10 minutes.
- Mix Greek yogurt with lemon juice, dill, and salt to create a dressing. Adjust seasoning to taste.
- Assemble the bowl by placing roasted chickpeas, sweet potatoes, cooked meatballs, and fresh kale in a bowl. Drizzle with yogurt dressing and serve.
