Herby Chicken Meatball Bowl

Ingredients

  • 1 can chickpeas drained and rinsed
  • 1 tablespoon olive oil
  • 0.25 cup parmesan cheese grated
  • 0.5 teaspoon salt
  • 2 medium sweet potatoes peeled and cubed
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 1 pound ground chicken
  • 0.25 cup parsley chopped
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 egg
  • 1 tablespoon olive oil
  • 0.5 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon dill chopped
  • 0.25 teaspoon salt
  • 2 cups kale torn into bite-sized pieces

Instructions

  1. Preheat your oven to 400°F (200°C). Drain and rinse the chickpeas. Pat them dry with a paper towel to ensure they roast well.
  2. Toss the chickpeas with olive oil, salt, and grated parmesan cheese. Spread on a baking sheet and roast for 20-25 minutes, stirring halfway through.
  3. Peel and cube the sweet potatoes. Toss with olive oil and salt, then spread on a baking sheet. Roast for 25-30 minutes, until tender and starting to caramelize.
  4. In a large bowl, mix ground chicken with chopped parsley, garlic powder, salt, pepper, and an egg. Form the mixture into small meatballs.
  5. In a large skillet over medium heat, cook the meatballs in olive oil until browned on both sides and cooked through, about 10 minutes.
  6. Mix Greek yogurt with lemon juice, dill, and salt to create a dressing. Adjust seasoning to taste.
  7. Assemble the bowl by placing roasted chickpeas, sweet potatoes, cooked meatballs, and fresh kale in a bowl. Drizzle with yogurt dressing and serve.
