Crispy Rice Omelette
A five-minute crispy rice omelette that combines the comforting flavors of chili oil, cheese, eggs, and rice. Inspired by Kerak Telor, this dish offers a spicy, cheesy, creamy, and crunchy breakfast or dinner.

Ingredients
- 1 tbsp chili oil
- 0.5 cup cooked rice
- 3 pcs egg
- 1 stalk scallion sliced
- 0.25 cup cheese shredded
- 0 hot sauce optional, to taste
Instructions
- Heat a splash of chili oil in a non-stick skillet over medium heat.
- Add 1/2 cup of cooked rice to the skillet, mixing until the rice is well combined with the chili oil.
- Spread the rice into an even layer in the skillet, gently pressing down. Let it cook for a few minutes until the bottom starts to develop a crisp crust.
- Pour in 2-3 whisked eggs evenly over the rice. Garnish with scallions and your favorite cheese.
- Cover the skillet with a lid and let the eggs cook through for about 3-4 minutes.
- Fold the omelette in half, then serve it with your favorite hot sauce.
