Sweet Potato Quinoa Salad

Ingredients

  • 2 large sweet potatoes peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon chipotle powder
  • 0.5 teaspoon salt
  • 1 tablespoon lime juice freshly squeezed
  • 1 whole red onion sliced
  • 1 cup quinoa uncooked
  • 2 cups water
  • 0.25 cup maple syrup
  • 2 tablespoons lime juice freshly squeezed
  • 0.25 cup cilantro chopped
  • 2 tablespoons olive oil
  • 0 pinch salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube 2 large sweet potatoes, then toss them with olive oil, chipotle powder, salt, and lime juice.
  3. Roast the seasoned sweet potatoes and 1 sliced red onion in the preheated oven for 25-30 minutes, until tender and slightly crispy.
  4. Cook 1 cup of quinoa according to package instructions, then fluff with a fork.
  5. Prepare the dressing by mixing 1/4 cup of maple syrup, 2 tablespoons of lime juice, 1/4 cup of chopped cilantro, 2 tablespoons of olive oil, and a pinch of salt.
  6. Combine the roasted sweet potatoes, red onion, and cooked quinoa in a large bowl. Pour the dressing over the salad and toss gently to combine.
