Sweet Potato Quinoa Salad

Ingredients
- 2 large sweet potatoes peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon chipotle powder
- 0.5 teaspoon salt
- 1 tablespoon lime juice freshly squeezed
- 1 whole red onion sliced
- 1 cup quinoa uncooked
- 2 cups water
- 0.25 cup maple syrup
- 2 tablespoons lime juice freshly squeezed
- 0.25 cup cilantro chopped
- 2 tablespoons olive oil
- 0 pinch salt
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube 2 large sweet potatoes, then toss them with olive oil, chipotle powder, salt, and lime juice.
- Roast the seasoned sweet potatoes and 1 sliced red onion in the preheated oven for 25-30 minutes, until tender and slightly crispy.
- Cook 1 cup of quinoa according to package instructions, then fluff with a fork.
- Prepare the dressing by mixing 1/4 cup of maple syrup, 2 tablespoons of lime juice, 1/4 cup of chopped cilantro, 2 tablespoons of olive oil, and a pinch of salt.
- Combine the roasted sweet potatoes, red onion, and cooked quinoa in a large bowl. Pour the dressing over the salad and toss gently to combine.
