Sweet Potato Cobbler

Ingredients

  • 3.75 cups all-purpose flour
  • 1 tbsp granulated sugar
  • 1.5 tsp kosher salt
  • 1.5 cups unsalted butter cold, in cubes
  • 0.5 cup cold water
  • 3 pounds sweet potatoes peeled and diced
  • 2.25 cups light brown sugar
  • 1.5 tbsp cornstarch
  • 0.5 tsp kosher salt
  • 0.5 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 1 cup fresh orange juice warm
  • 1 tsp orange zest
  • 2 tsp vanilla extract
  • 0.33 cup unsalted butter
  • 0 pie dough
  • 1 large egg beaten with 1 tsp of water
  • 0 ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the flour, sugar, and salt for the crust. Add in the cold butter cubes.
  3. Gradually add cold water to the flour mixture, mixing until dough forms. Wrap and chill the dough for at least 30 minutes.
  4. Meanwhile, in a pot over medium heat, combine diced sweet potatoes, brown sugar, cornstarch, salt, cinnamon, nutmeg, and warmed orange juice.
  5. Stir in the orange zest, vanilla extract, and butter. Cook for 5-7 minutes until the mixture thickens.
  6. Roll out the chilled pie dough to fit over the baking dish.
  7. Pour the sweet potato mixture into a greased baking dish and cover with the dough. Brush with beaten egg and sprinkle with ground cinnamon.
  8. Bake in the preheated oven for 50-60 minutes or until the crust is golden brown and the filling is bubbling.
