Greek-Inspired Shrimp Bowls with Lemony Yogurt

Ingredients

  • 0.25 cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 pound peeled and deveined shrimp
  • 2 cups zucchini sliced into half moons
  • 2 cups bell peppers sliced
  • 1 tablespoon extra-virgin olive oil
  • 1 cup plain whole-milk Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 0 salt
  • 2 cups long-grain white rice cooked
  • 0.25 cup fresh parsley chopped

Instructions

  1. Prepare the marinade by combining olive oil, fresh lemon juice, minced garlic, paprika, and dried oregano in a bowl.
  2. Divide the marinade evenly and pour over the shrimp and vegetables. Toss well to coat.
  3. Heat 1 tablespoon of olive oil in a large pan over medium heat. Sauté the marinated vegetables until softened, about 5-7 minutes.
  4. Remove the vegetables from the pan and add the shrimp. Cook for 3-5 minutes or until the shrimp turn golden and opaque.
  5. Prepare the lemony yogurt by mixing Greek yogurt with a splash of lemon juice and a pinch of salt.
  6. Assemble the bowls by placing cooked rice as the base, followed by the sautéed vegetables and shrimp. Top with a dollop of lemony yogurt and garnish with fresh parsley.
