Thai-Inspired Coconut Poached Fish
This soothing Thai-inspired dish features fish poached in a creamy coconut broth, infused with aromatic spices and herbs. Perfect with jasmine rice to soak up the flavors.

Ingredients
- 1 white onion thinly sliced
- 2 cloves garlic thinly sliced
- 1 tablespoon ginger minced fresh
- 1 can coconut milk
- 2 cups seafood stock
- 2 tablespoons fish sauce
- 1 teaspoon sugar
- 1 teaspoon lime zest zest from lime
- 4 cups spinach fresh
- 4 fillets halibut fillets skin-off
- 0 salt to taste
- 0 black pepper to taste
- 0.25 cup cilantro fresh leaves and stems for garnish
- 2 scallions thinly sliced for garnish
- 1 tablespoon chili oil or chili crisp, optional for garnish
- 2 tablespoons lime juice
Instructions
- Sweat the thinly sliced white onion, garlic cloves, and minced ginger in a large pan over medium heat.
- Add the canned coconut milk, seafood stock, fish sauce, sugar, and lime zest to the pan and bring to a simmer.
- Stir in the fresh spinach until wilted.
- Season the halibut fillets with salt and pepper, then nestle them into the coconut broth. Allow them to poach gently for 10-12 minutes.
- Garnish with cilantro, scallions, chili oil, and a squeeze of fresh lime juice before serving.
