Teriyaki Salmon Rice Bowls
Delicious and nutrient-dense salmon teriyaki bowls with a variety of veggies over a base of farro. Perfect for a filling and satisfying meal.

Ingredients
- 1.5 pounds salmon fillets
- 0.5 cups teriyaki sauce
- 0 parchment paper
- 1 cup farro
- 1 cup broccoli
- 1 cup carrot
- 1 cup red bell pepper
- 2 tablespoons sesame seeds
- 3 stalks green onions chopped
Instructions
- Cube the salmon fillets into bite-sized pieces and marinade with teriyaki sauce for at least 15 minutes.
- Preheat the oven to 375°F (190°C) and place the marinated salmon cubes onto a baking sheet lined with parchment paper. Bake for 12-15 minutes or until cooked through.
- While the salmon is baking, cook the farro according to package instructions. Once cooked, set aside as the base for the bowls.
- Prepare a variety of vegetables such as broccoli, carrots, and bell peppers by chopping them into bite-sized pieces.
- Assemble the bowls by placing the cooked farro as the base, adding roasted vegetables, and topping it with baked teriyaki salmon. Drizzle extra teriyaki sauce over the top if desired.
