Teriyaki Salmon Rice Bowls

Ingredients

  • 1.5 pounds salmon fillets
  • 0.5 cups teriyaki sauce
  • 0 parchment paper
  • 1 cup farro
  • 1 cup broccoli
  • 1 cup carrot
  • 1 cup red bell pepper
  • 2 tablespoons sesame seeds
  • 3 stalks green onions chopped

Instructions

  1. Cube the salmon fillets into bite-sized pieces and marinade with teriyaki sauce for at least 15 minutes.
  2. Preheat the oven to 375°F (190°C) and place the marinated salmon cubes onto a baking sheet lined with parchment paper. Bake for 12-15 minutes or until cooked through.
  3. While the salmon is baking, cook the farro according to package instructions. Once cooked, set aside as the base for the bowls.
  4. Prepare a variety of vegetables such as broccoli, carrots, and bell peppers by chopping them into bite-sized pieces.
  5. Assemble the bowls by placing the cooked farro as the base, adding roasted vegetables, and topping it with baked teriyaki salmon. Drizzle extra teriyaki sauce over the top if desired.
