Strawberry Bites
Delicious strawberry bites with a sweet compote and icing.

Ingredients
- 1 pound strawberries
- 0.25 cup maple syrup
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2.5 cups all-purpose flour
- 2 tablespoons baking powder
- 1 teaspoon salt
- 1.25 cups buttermilk
- 1 stick unsalted butter
- 1 cup powdered sugar
- 2 tablespoons milk
- 0.5 teaspoon vanilla extract
Instructions
- Place the strawberries, maple syrup, vanilla extract, and lemon juice in a saucepan.
- Simmer gently over medium heat for 10-15 minutes, stirring occasionally until strawberries soften and break down a bit and sauce thickens slightly. Adjust heat as needed to maintain a gentle simmer.
- Remove the saucepan from the heat and set aside.
- Combine all-purpose flour, baking powder, salt, buttermilk, and shredded unsalted butter in a bowl until a soft dough forms.
- Turn the dough onto a clean surface and fold it over itself at least 5 times.
- Roll the dough into long logs.
- Cut the logs into bite-size pieces.
- Roll each piece into a ball.
- Dip each dough ball into the compote.
- Place the coated balls into a 9×9 baking pan.
- Bake at 425°F for 18 minutes.
- Mix powdered sugar, milk, and vanilla extract to make the icing.
