Air-fryer King Salmon with Edamame Quinoa Salad
A delicious and nourishing high protein meal featuring air-fried king salmon accompanied by a vibrant edamame quinoa salad tossed in a maple vinaigrette.

Ingredients
- 4 fillets Salmon fresh or defrosted
- 0 Seafood seasoning to taste
- 2 tablespoons Olive oil
- 2 cups Quinoa cooked
- 0.75 cups Shelled edamame
- 0.5 cups English cucumber diced
- 0.5 cups Red bell pepper chopped
- 0.5 cups Carrot julienned
- 0.25 cups Green onion sliced
- 0.25 cups Shelled pumpkin seeds
- 0.25 cups Extra virgin olive oil
- 0.25 cups Rice vinegar
- 0.25 cups Coconut aminos substitute with low sodium soy sauce
- 2 tablespoons Maple syrup
- 1 teaspoon Minced garlic
- 1 teaspoon Red pepper flakes
- 1 teaspoon Salt
Instructions
- Season the salmon with seafood seasoning and olive oil.
- Place the salmon fillets in the air fryer and cook at 375 F for 8 minutes.
- Prepare the quinoa and edamame salad by combining all the salad ingredients in a large bowl.
- Combine all ingredients for the maple vinaigrette in a small mason jar and shake well to emulsify.
- Pour the maple vinaigrette over the quinoa salad and toss well to combine. Serve alongside the air-fried salmon.
