Air-fryer King Salmon with Edamame Quinoa Salad

Ingredients

  • 4 fillets Salmon fresh or defrosted
  • 0 Seafood seasoning to taste
  • 2 tablespoons Olive oil
  • 2 cups Quinoa cooked
  • 0.75 cups Shelled edamame
  • 0.5 cups English cucumber diced
  • 0.5 cups Red bell pepper chopped
  • 0.5 cups Carrot julienned
  • 0.25 cups Green onion sliced
  • 0.25 cups Shelled pumpkin seeds
  • 0.25 cups Extra virgin olive oil
  • 0.25 cups Rice vinegar
  • 0.25 cups Coconut aminos substitute with low sodium soy sauce
  • 2 tablespoons Maple syrup
  • 1 teaspoon Minced garlic
  • 1 teaspoon Red pepper flakes
  • 1 teaspoon Salt

Instructions

  1. Season the salmon with seafood seasoning and olive oil.
  2. Place the salmon fillets in the air fryer and cook at 375 F for 8 minutes.
  3. Prepare the quinoa and edamame salad by combining all the salad ingredients in a large bowl.
  4. Combine all ingredients for the maple vinaigrette in a small mason jar and shake well to emulsify.
  5. Pour the maple vinaigrette over the quinoa salad and toss well to combine. Serve alongside the air-fried salmon.
