Grandma Blanche's Polish Pierogi

Servings: 4

Ingredients

  • 2 lbs Potatoes peeled and quartered
  • 0.5 cup Mint freshly chopped
  • 0 Salt to taste
  • 0 Black Pepper freshly ground, to taste
  • 2 Egg
  • 3 cups Flour
  • 0.5 tsp Salt
  • 1 large Onion chopped
  • 8 oz Bacon chopped

Instructions

  1. Prepare the mint mashed potatoes by boiling the potatoes until tender.
  2. Mash the boiled potatoes with mint and season to taste with salt and pepper.
  3. Make the pierogi dough by combining eggs, flour, and a pinch of salt. Knead until smooth and elastic.
  4. Roll the dough out as thin as possible and cut into circles using a round cutter.
  5. Place a spoonful of mint mashed potato filling onto each dough circle and fold over, crimping the edges closed.
  6. Boil the filled pierogi in heavily salted water until they float to the top, about 5 minutes.
  7. In a separate pan, fry chopped onions and bacon until they reach a crispy texture.
  8. Serve the pierogi hot, garnished with crispy onions and bacon, alongside sour cream or cottage cheese.
