Grandma Blanche's Polish Pierogi
Traditional Polish pierogi filled with mint mashed potatoes, crafted from Grandma Blanche's legacy recipe finally put into words by her granddaughter.

Ingredients
- 2 lbs Potatoes peeled and quartered
- 0.5 cup Mint freshly chopped
- 0 Salt to taste
- 0 Black Pepper freshly ground, to taste
- 2 Egg
- 3 cups Flour
- 0.5 tsp Salt
- 1 large Onion chopped
- 8 oz Bacon chopped
Instructions
- Prepare the mint mashed potatoes by boiling the potatoes until tender.
- Mash the boiled potatoes with mint and season to taste with salt and pepper.
- Make the pierogi dough by combining eggs, flour, and a pinch of salt. Knead until smooth and elastic.
- Roll the dough out as thin as possible and cut into circles using a round cutter.
- Place a spoonful of mint mashed potato filling onto each dough circle and fold over, crimping the edges closed.
- Boil the filled pierogi in heavily salted water until they float to the top, about 5 minutes.
- In a separate pan, fry chopped onions and bacon until they reach a crispy texture.
- Serve the pierogi hot, garnished with crispy onions and bacon, alongside sour cream or cottage cheese.
