Creamy Cheese Blintzes with Berry Sauce

Ingredients

  • 1 cup Ricotta
  • 8 oz Cream Cheese softened
  • 0.25 cup Sugar
  • 1 Egg Yolk
  • 1 tsp Lemon Juice
  • 1 tsp Vanilla Extract
  • 1.25 cups Milk
  • 1 cup Flour
  • 0.25 cup Sugar
  • 0 Salt pinch
  • 4 Eggs
  • 1 tsp Vanilla Extract
  • 3 tbsp Butter softened
  • 0.25 cup Batter per blintz
  • 0 Cheese Filling
  • 1 tbsp Butter
  • 1 tbsp Vegetable Oil
  • 1.5 cups Berries
  • 0.25 cup Sugar
  • 0.5 lemon Lemon Juice

Instructions

  1. In a mixing bowl, combine ricotta, softened cream cheese, sugar, egg yolk, lemon juice, and vanilla. Mix until smooth and chill in the freezer while making the blintzes.
  2. For the batter, blend milk, flour, sugar, salt, eggs, vanilla, and softened butter until smooth.
  3. Heat a skillet over medium heat. Pour 1/4 cup of batter into the skillet and swirl to form a thin circle. Cook until lightly golden, then flip and cook briefly. Remove to a plate.
  4. Place a spoonful of cheese filling near the bottom of each blintz, fold in the sides, and roll up. Pan-fry in a skillet with butter and oil, seam-side down, until golden, 1-2 minutes per side.
  5. In a saucepan, simmer 1 1/2 cups of berries, lemon juice, and sugar for 5-6 minutes. Stir in an additional 1 cup of berries and remove from heat.
