Creamy Cheese Blintzes with Berry Sauce
Delicious blintzes filled with a creamy cheese mixture, pan-fried until golden brown and served with a luscious berry sauce.

Ingredients
- 1 cup Ricotta
- 8 oz Cream Cheese softened
- 0.25 cup Sugar
- 1 Egg Yolk
- 1 tsp Lemon Juice
- 1 tsp Vanilla Extract
- 1.25 cups Milk
- 1 cup Flour
- 0.25 cup Sugar
- 0 Salt pinch
- 4 Eggs
- 1 tsp Vanilla Extract
- 3 tbsp Butter softened
- 0.25 cup Batter per blintz
- 0 Cheese Filling
- 1 tbsp Butter
- 1 tbsp Vegetable Oil
- 1.5 cups Berries
- 0.25 cup Sugar
- 0.5 lemon Lemon Juice
Instructions
- In a mixing bowl, combine ricotta, softened cream cheese, sugar, egg yolk, lemon juice, and vanilla. Mix until smooth and chill in the freezer while making the blintzes.
- For the batter, blend milk, flour, sugar, salt, eggs, vanilla, and softened butter until smooth.
- Heat a skillet over medium heat. Pour 1/4 cup of batter into the skillet and swirl to form a thin circle. Cook until lightly golden, then flip and cook briefly. Remove to a plate.
- Place a spoonful of cheese filling near the bottom of each blintz, fold in the sides, and roll up. Pan-fry in a skillet with butter and oil, seam-side down, until golden, 1-2 minutes per side.
- In a saucepan, simmer 1 1/2 cups of berries, lemon juice, and sugar for 5-6 minutes. Stir in an additional 1 cup of berries and remove from heat.
