Sweet Chili Garlic Meatballs
Delicious sheet pan chili garlic meatballs cooked to perfection with added veggies, served on white rice with a drizzle of kewpie. Perfect for a healthy meal prep with 35 grams of protein per serving.

Ingredients
- 1 pound ground pork
- 0.5 cup sweet chili sauce store-bought
- 3 cloves garlic minced
- 1 egg beaten
- 0 parchment paper for lining pan
- 1 red bell pepper chopped
- 1 zucchini chopped
- 1 red onion chopped
- 2 cups white rice cooked
- 0 kewpie mayonnaise to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix together ground pork, sweet chili sauce, minced garlic, and a beaten egg until well combined.
- Shape the mixture into meatballs and place them on a sheet pan lined with parchment paper.
- Bake in the preheated oven for 20 minutes.
- While the meatballs are baking, prepare the vegetables by chopping red bell peppers, zucchinis, and red onions.
- After 20 minutes, add the chopped vegetables to the sheet pan and continue baking for another 15-20 minutes.
- Serve the meatballs and veggies over cooked white rice, drizzled with kewpie mayonnaise.
