Coconut Lime Chicken Meatballs
Juicy and flavorful chicken meatballs in a coconut lime sauce, perfectly balanced with spicy and creamy notes. Ideal for a quick weeknight dinner served over steamed jasmine rice.

Ingredients
- 2.2 pounds chicken mince ground chicken
- 1 cup bread crumbs
- 1 egg
- 0.5 cups coriander chopped
- 1 tablespoon garlic minced
- 1 tablespoon ginger minced
- 2 tablespoons soy sauce
- 1 tablespoon chili sauce
- 0 salt a pinch
- 2 tablespoons peanut oil
- 1 onion diced
- 1 teaspoon garlic minced
- 1 teaspoon ginger minced
- 0.5 cup chicken stock
- 1 can coconut milk
- 1 lime zest and juice
- 0.5 handful coriander chopped
- 0 jasmine rice
Instructions
- Combine chicken mince, breadcrumbs, egg, coriander, garlic, ginger, soy sauce, and chili sauce in a bowl. Mix well until all ingredients are fully incorporated.
- Shape the mixture into meatballs, roughly the size of a golf ball.
- Heat peanut oil in a pan over medium heat. Add the meatballs in batches, browning them until golden on all sides. Set aside.
- In the same pan, add diced onion and cook until translucent. Then add garlic and ginger, sautéing for another minute.
- Pour in chicken stock and bring to a simmer. Add coconut milk and bring back to a light simmer.
- Add the lime zest and juice, returning the meatballs to the pan along with their juices. Add chopped coriander and bring to a simmer. Cover and cook on low for 10 minutes.
- Serve meatballs over jasmine rice with an additional squeeze of lime.
