Coconut Lime Chicken Meatballs

Ingredients

  • 2.2 pounds chicken mince ground chicken
  • 1 cup bread crumbs
  • 1 egg
  • 0.5 cups coriander chopped
  • 1 tablespoon garlic minced
  • 1 tablespoon ginger minced
  • 2 tablespoons soy sauce
  • 1 tablespoon chili sauce
  • 0 salt a pinch
  • 2 tablespoons peanut oil
  • 1 onion diced
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger minced
  • 0.5 cup chicken stock
  • 1 can coconut milk
  • 1 lime zest and juice
  • 0.5 handful coriander chopped
  • 0 jasmine rice

Instructions

  1. Combine chicken mince, breadcrumbs, egg, coriander, garlic, ginger, soy sauce, and chili sauce in a bowl. Mix well until all ingredients are fully incorporated.
  2. Shape the mixture into meatballs, roughly the size of a golf ball.
  3. Heat peanut oil in a pan over medium heat. Add the meatballs in batches, browning them until golden on all sides. Set aside.
  4. In the same pan, add diced onion and cook until translucent. Then add garlic and ginger, sautéing for another minute.
  5. Pour in chicken stock and bring to a simmer. Add coconut milk and bring back to a light simmer.
  6. Add the lime zest and juice, returning the meatballs to the pan along with their juices. Add chopped coriander and bring to a simmer. Cover and cook on low for 10 minutes.
  7. Serve meatballs over jasmine rice with an additional squeeze of lime.
