Crispy Dumpling Salad with Peanut Slaw

Ingredients

  • 0.25 cup water
  • 2 tsp cornstarch
  • 0 salt big pinch
  • 2 tbsp neutral oil for frying
  • 1 package Ginger Chicken Dumplings frozen
  • 1 portion water-cornstarch mixture
  • 1 package shredded cabbage
  • 1 Red Bell Pepper thinly sliced
  • 3 scallions thinly sliced
  • 0.33 cup smooth peanut butter
  • 2 tbsp tamari
  • 1.5 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tsp chili crisp
  • 1 clove garlic grated
  • 0 water to thin
  • 1 portion peanut dressing
  • 0 chives chopped, for garnish
  • 0 cilantro chopped, for garnish
  • 0 sesame seeds for garnish
  • 0 chili oil for garnish

Instructions

  1. In a small bowl, whisk together 1/4 cup water, 2 tsp cornstarch, and a big pinch of salt until fully combined.
  2. Heat 2 tbsp of neutral oil in a large skillet over medium heat. Once hot, add a package of frozen Ginger Chicken Dumplings in a single layer.
  3. Cook dumplings for 3-4 minutes until the bottoms are golden brown. Whisk the cornstarch mixture again and gently pour it into the pan. Cover with a lid and cook for another 5-7 minutes until the mixture is crispy.
  4. Transfer the crispy dumplings to a plate and let them cool slightly. Cut each dumpling in half.
  5. In a large bowl, add 1 package of shredded cabbage, 1 thinly sliced red bell pepper, and 3 thinly sliced scallions.
  6. Whisk together 1/3 cup smooth peanut butter, 2 tbsp tamari, 1 ½ tbsp rice vinegar, 1 tbsp sesame oil, 1 tbsp honey, 1 tsp chili crisp, and 1 clove grated garlic. Add water to achieve a pourable consistency.
  7. Pour the peanut dressing over the cabbage, pepper, and scallions. Mix to combine until everything is evenly coated.
  8. Serve the salad with the halved crispy dumplings on top. Garnish with chopped chives, cilantro, sesame seeds, and chili oil. Add more peanut sauce if desired.
