Pan-Seared Octopus with Golden Potatoes

Ingredients

  • 1 large onion sliced
  • 0.5 bunch leek sliced
  • 2.2 pounds octopus
  • 2 bay leaf adds aroma
  • 4 medium potato
  • 5 cloves garlic minced
  • 2 tablespoons olive oil
  • 0.5 large onion chopped
  • 1 tablespoon butter
  • 0 salt to taste
  • 0 black pepper to taste
  • 2 tablespoons scallion chopped

Instructions

  1. Prepare the aromatic base by slicing the onion and half bunch of leek.
  2. Place the sliced onion, leek, octopus, and bay leaves in a pressure cooker.
  3. Cook the octopus in the pressure cooker for 12 minutes.
  4. Boil the potatoes until tender, then slice them.
  5. Sauté the sliced potatoes with minced garlic and chopped onion in olive oil.
  6. Remove octopus from pressure cooker, season with salt and pepper, and sear in a hot skillet with olive oil and butter.
  7. Plate the octopus and potatoes, and garnish with chopped scallions.
