Pan-Seared Octopus with Golden Potatoes

Ingredients
- 1 large onion sliced
- 0.5 bunch leek sliced
- 2.2 pounds octopus
- 2 bay leaf adds aroma
- 4 medium potato
- 5 cloves garlic minced
- 2 tablespoons olive oil
- 0.5 large onion chopped
- 1 tablespoon butter
- 0 salt to taste
- 0 black pepper to taste
- 2 tablespoons scallion chopped
Instructions
- Prepare the aromatic base by slicing the onion and half bunch of leek.
- Place the sliced onion, leek, octopus, and bay leaves in a pressure cooker.
- Cook the octopus in the pressure cooker for 12 minutes.
- Boil the potatoes until tender, then slice them.
- Sauté the sliced potatoes with minced garlic and chopped onion in olive oil.
- Remove octopus from pressure cooker, season with salt and pepper, and sear in a hot skillet with olive oil and butter.
- Plate the octopus and potatoes, and garnish with chopped scallions.
