Greek Meatballs with Spinach Feta Orzo and Tzatziki
A delicious and hearty meal featuring flavorful Greek meatballs served over a bed of spinach and feta orzo, topped with homemade tzatziki sauce.

Ingredients
- 1 lb ground chicken
- 0.33 cup panko breadcrumbs
- 0.25 cup sun-dried tomatoes
- 0.25 cup feta cheese crumbled
- 0.25 cup red onion finely diced
- 0.25 cup mint chopped
- 2 cloves garlic minced
- 1 piece egg
- 2 tbsp milk
- 0 salt
- 0 pepper
- 0 avocado oil
- 1.5 cups orzo
- 0 chicken broth
- 2 cups spinach
- 1 tbsp olive oil
- 0.5 lemon lemon juice
- 0.5 cup feta cheese crumbled
- 2 Persian cucumbers shaved
- 5 oz Greek yogurt
- 0.25 tsp garlic powder
- 0.5 lemon lemon juice
- 1 lemon lemon zest
- 0.5 tsp extra virgin olive oil
- 2 tbsp fresh dill chopped
- 0 salt
- 0 pepper
Instructions
- Combine ground chicken, panko breadcrumbs, sun-dried tomatoes, feta, red onion, mint, minced garlic, egg, milk, salt, and pepper in a bowl. Mix well and form into 12-14 meatballs.
- Pan sear the meatballs in avocado oil over medium heat until golden brown on both sides. Transfer to a preheated oven at 350°F for 12 minutes to finish cooking.
- Cook 1.5 cups of orzo in chicken broth according to package instructions. Once done, stir in spinach, olive oil, lemon juice, and feta. Serve warm.
- Prepare the tzatziki by combining shaved cucumbers, Greek yogurt, garlic powder, lemon juice, lemon zest, olive oil, and fresh dill. Season with salt and pepper to taste.
- Assemble the dish by placing the warm spinach feta orzo on a plate, topping with Greek meatballs, and adding a generous dollop of tzatziki on top.
