Greek Meatballs with Spinach Feta Orzo and Tzatziki

Ingredients

  • 1 lb ground chicken
  • 0.33 cup panko breadcrumbs
  • 0.25 cup sun-dried tomatoes
  • 0.25 cup feta cheese crumbled
  • 0.25 cup red onion finely diced
  • 0.25 cup mint chopped
  • 2 cloves garlic minced
  • 1 piece egg
  • 2 tbsp milk
  • 0 salt
  • 0 pepper
  • 0 avocado oil
  • 1.5 cups orzo
  • 0 chicken broth
  • 2 cups spinach
  • 1 tbsp olive oil
  • 0.5 lemon lemon juice
  • 0.5 cup feta cheese crumbled
  • 2 Persian cucumbers shaved
  • 5 oz Greek yogurt
  • 0.25 tsp garlic powder
  • 0.5 lemon lemon juice
  • 1 lemon lemon zest
  • 0.5 tsp extra virgin olive oil
  • 2 tbsp fresh dill chopped
  • 0 salt
  • 0 pepper

Instructions

  1. Combine ground chicken, panko breadcrumbs, sun-dried tomatoes, feta, red onion, mint, minced garlic, egg, milk, salt, and pepper in a bowl. Mix well and form into 12-14 meatballs.
  2. Pan sear the meatballs in avocado oil over medium heat until golden brown on both sides. Transfer to a preheated oven at 350°F for 12 minutes to finish cooking.
  3. Cook 1.5 cups of orzo in chicken broth according to package instructions. Once done, stir in spinach, olive oil, lemon juice, and feta. Serve warm.
  4. Prepare the tzatziki by combining shaved cucumbers, Greek yogurt, garlic powder, lemon juice, lemon zest, olive oil, and fresh dill. Season with salt and pepper to taste.
  5. Assemble the dish by placing the warm spinach feta orzo on a plate, topping with Greek meatballs, and adding a generous dollop of tzatziki on top.
