Whipped Feta with Roasted Potatoes and Tomatoes

Ingredients

  • 1 pound potatoes chopped
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 pint cherry tomatoes halved
  • 8 ounces feta cheese
  • 0.25 cup Greek yogurt plain
  • 2 tablespoons chili-infused olive oil
  • 0.25 cup fresh parsley chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop 1 pound of potatoes into bite-sized pieces.
  3. Toss the potatoes with 2 tablespoons of olive oil and a pinch of salt and pepper.
  4. Place the potatoes on a baking sheet and roast for 20 minutes.
  5. While the potatoes are roasting, halve 1 pint of cherry tomatoes.
  6. After 20 minutes, add the tomatoes to the baking sheet with the potatoes and roast for an additional 15-20 minutes until both are golden and tender.
  7. In a blender or food processor, blend 8 ounces of feta cheese with 1/4 cup of Greek yogurt until smooth.
  8. Spread the whipped feta on a serving dish.
  9. Top the whipped feta with the roasted potatoes and tomatoes.
  10. Drizzle with 2 tablespoons of chili-infused olive oil and sprinkle with 1/4 cup of chopped fresh parsley before serving.
