Crunchy Miso Salmon Bites

Cook time: 15 minutes

Servings: 4

Ingredients

  • 1.5 lbs salmon
  • 0.33 cup low sodium soy sauce or tamari
  • 3 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 tsp freshly grated ginger
  • 2 tbsp white miso
  • 0.25 cup honey
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1 serving jasmine rice
  • 1 tbsp chives

Instructions

  1. Turn broiler on high.
  2. Cut salmon into bite-sized pieces and place them in a large bowl.
  3. In another small bowl, whisk together the soy sauce, vinegar, sesame oil, ginger, miso, honey, garlic powder, and salt until smooth.
  4. Pour 3/4 of the sauce over the salmon, reserving the rest.
  5. Coat the salmon well with the sauce, cover, and let sit for 5 minutes.
  6. In an even layer, spread the salmon onto a baking sheet, ensuring no liquid remains in the bowl.
  7. Place the salmon under the broiler for 7-8 minutes until crunchy on top. If you prefer it cooked through, broil for 9 minutes.
  8. Remove from oven.
  9. Serve the salmon over cooked jasmine rice and chopped chives.
  10. Drizzle the remaining sauce on top and enjoy!
