Crispy Pork Belly Broccoli And ‘Cheddar’ Rice

Ingredients

  • 0.5 lb pork belly
  • 0 salt
  • 0 garlic powder
  • 0 onion powder
  • 1 cup uncooked rice
  • 1 sprig sage
  • 2 cups vegetable stock
  • 1 cup broccoli florets
  • 0.5 cup plant-based cheddar

Instructions

  1. Cut about 1/2 lb of pork belly into cubes, then add to a hot pan over medium heat.
  2. Season the pork belly with salt, garlic powder, and onion powder once brown, then cook until golden and crispy.
  3. Remove the pork belly with a perforated spoon.
  4. Add in 1 cup of uncooked rice and a sprig of sage to the pan, and toast for a few minutes.
  5. Add in 2 cups of vegetable stock and 1 cup of small broccoli florets, and cook until the rice is cooked but still chewy.
  6. Remove the sage from the pan.
  7. Stir in 1/2 cup of plant-based cheddar until combined.
  8. Top the rice with the crispy pork belly and serve.
