Broccoli Cheddar Soup Pasta

Ingredients

  • 0.5 lb bacon
  • 1 lb chicken breast
  • 1 to 2, shredded carrots
  • 1 chopped broccoli crown
  • 12 to 24 oz evaporated milk
  • 0.5 to 1 cup cheddar cheese
  • 1 to 2 tsp garlic powder
  • 1 to 2 tsp onion powder
  • 1 to 2 tsp black pepper
  • 1 to 2 tsp salt
  • 1 to 2 tsp dried oregano
  • 1 to 2 tsp crushed red pepper flakes
  • 1 lb chicken breast
  • 0.5 lb bacon
  • 1 package pasta
  • 1 to garnish parsley or chives

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove and set aside, leaving the bacon fat in the pot.
  2. In the same pot, add the chicken breast and cook until browned and cooked through. Remove and set aside.
  3. Add the shredded carrots and chopped broccoli to the pot. Sauté until the vegetables are tender.
  4. Pour in the evaporated milk or heavy cream. Stir to combine and bring to a simmer.
  5. Add the cheddar cheese and stir until melted and the mixture is smooth.
  6. Season the mixture with garlic powder, onion powder, black pepper, salt, dried oregano, and crushed red pepper flakes. Stir to combine.
  7. Chop the cooked chicken and bacon into bite-sized pieces and add them back into the pot.
  8. Cook the pasta according to package instructions. Drain and add to the soup mixture.
  9. Stir everything together until well combined and heated through.
  10. Serve the soup pasta garnished with parsley or chives.
