Sheet Pan Garlic & Gruyere Chicken With Brussels
A hearty, healthy weeknight dinner with roasted Brussels sprouts, garlicky butter-brushed chicken, and a generous sprinkle of Gruyere cheese, broiled until bubbly and golden.

Ingredients
- 1 lb Brussels sprouts
- 2 tbsp olive oil
- 0.5 tsp salt
- 0.25 tsp cracked pepper
- 1 lb Brussels sprouts
- 4 tbsp butter
- 3 cloves garlic cloves
- 1 tsp aglio olio seasoning
- 0.5 tsp salt
- 1 lb chicken breasts
- 4 tbsp melted garlic butter
- 0.25 tsp cracked pepper
- 1 lb chicken breasts
- 1.5 cups Gruyere cheese
- 1.5 cups Gruyere cheese
Instructions
- Preheat oven to 425°F and arrange Brussels sprouts on a large baking sheet. Drizzle with olive oil and season well with salt and pepper, to taste.
- Roast Brussels sprouts for 10 minutes, or until slightly browned. Remove from oven.
- While the Brussels sprouts are roasting, combine melted butter, garlic, aglio olio seasoning (or Italian seasoning), and salt in a small bowl. Whisk together until combined.
- Add raw chicken to the sheet pan and spread melted garlic butter all over. Season with pepper.
- Return sheet pan to the oven and bake for 10 minutes, or until chicken is cooked through. Remove from oven and sprinkle with Gruyere cheese.
- Turn oven to broil. Return the sheet pan to the oven and cook until cheese is bubbly.
