Cinnamon Swirl Banana Bread

Ingredients

  • 2 tablespoons butter
  • 0.25 cup white sugar
  • 3 tablespoons brown sugar
  • 1 tablespoon cinnamon
  • 1 cup mashed bananas
  • 1 cup sour cream
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 cup salted butter
  • 1 cup white sugar
  • 2 pieces eggs
  • 1 teaspoon vanilla extract
  • 1 batch banana mixture
  • 1 batch dry ingredients
  • 0.5 batch batter
  • 0.5 batch cinnamon and sugar mixture
  • 0.5 batch batter
  • 0.5 batch cinnamon and sugar mixture
  • 2.5 tablespoons melted salted butter

Instructions

  1. Preheat oven to 350°F. Butter two 8 1/2 x 4 1/2 inch loaf pans or one 9 x 13 inch pan. In a bowl, mix together the cinnamon swirl ingredients except for the melted butter. Set aside.
  2. Mash the bananas. Add sour cream, mix and set aside.
  3. In a separate bowl, combine the flour, baking soda, baking powder, and salt. Lightly fluff with a spoon or fork to mix. Set aside.
  4. In a large mixing bowl, mix together softened butter and white sugar. Mix in the eggs and vanilla extract.
  5. Mix in the banana mixture on low speed.
  6. Add dry ingredients to the banana mixture. Fold in with a spatula, do not use a beater to avoid overmixing.
  7. Spread half of the batter evenly into the prepared pans. Sprinkle with half of the cinnamon and sugar mixture.
  8. Scoop on the remaining batter and carefully spread. Sprinkle with the remaining sugar mixture. Drizzle on melted butter.
  9. Use a knife to go back and forth in the pan to create swirls, going all the way to the bottom.
  10. Bake for 43-47 minutes (32-35 minutes for a 9 x 13 inch pan) until golden brown, the top is crispy, and a toothpick comes out clean when inserted into the bread.
  11. Remove from oven and serve warm. Enjoy!
