Italian Grinder White Bean Salad

Ingredients

  • 1 can cannellini beans
  • 1 can garbanzo beans
  • 100 grams salami
  • 1 medium red bell pepper
  • 0.5 cup sliced pepperoncini
  • 0.5 medium red onion
  • 1 cup mozzarella pearls
  • 0.5 cup fresh basil
  • 0.25 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions

  1. Rinse and drain the cannellini beans and garbanzo beans.
  2. Chop the salami into bite-sized pieces.
  3. Dice the red bell pepper.
  4. Slice the pepperoncini into rings.
  5. Thinly slice the red onion.
  6. Combine the cannellini beans, garbanzo beans, salami, red bell pepper, pepperoncini, red onion, mozzarella pearls, and fresh basil in a large bowl.
  7. In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, dried oregano, red pepper flakes, salt, and black pepper to make the vinaigrette.
  8. Pour the vinaigrette over the salad ingredients in the large bowl.
  9. Toss the salad gently to combine all ingredients and coat them with the vinaigrette.
  10. Serve immediately or refrigerate for up to 3 days for meal prep.
