Italian Grinder White Bean Salad

Ingredients
- 1 can cannellini beans
- 1 can garbanzo beans
- 100 grams salami
- 1 medium red bell pepper
- 0.5 cup sliced pepperoncini
- 0.5 medium red onion
- 1 cup mozzarella pearls
- 0.5 cup fresh basil
- 0.25 cup olive oil
- 2 tablespoons red wine vinegar
- 2 cloves garlic
- 1 teaspoon dried oregano
- 0.5 teaspoon red pepper flakes
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Rinse and drain the cannellini beans and garbanzo beans.
- Chop the salami into bite-sized pieces.
- Dice the red bell pepper.
- Slice the pepperoncini into rings.
- Thinly slice the red onion.
- Combine the cannellini beans, garbanzo beans, salami, red bell pepper, pepperoncini, red onion, mozzarella pearls, and fresh basil in a large bowl.
- In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, dried oregano, red pepper flakes, salt, and black pepper to make the vinaigrette.
- Pour the vinaigrette over the salad ingredients in the large bowl.
- Toss the salad gently to combine all ingredients and coat them with the vinaigrette.
- Serve immediately or refrigerate for up to 3 days for meal prep.
