Greek Chicken Skewers with Feta Fries
A spring and summer GO-TO...add a side of homemade garlicky feta fries for a deliciously fun family dinner!

Ingredients
- 0.25 cup Extra Virgin Olive Oil
- 1 Shallot chopped
- 4 cloves Garlic chopped
- 2 teaspoons Dried Oregano
- 1 teaspoon Chipotle Chili Powder
- 1 teaspoon Honey
- 1 tablespoons Harissa Sauce or use hot sauce
- 1 tablespoon Lemon Zest
- 0 Salt
- 0 Black Pepper
- 1.5 pounds Chicken Breasts cut into bite-size chunks
- 0 Skewers
- 4 pieces Russet Potatoes cut into 1/4-inch-thick matchsticks
- 2 tablespoons Extra Virgin Olive Oil
- 1 teaspoon Garlic Powder
- 0.25 teaspoon Cayenne Pepper
- 0.5 cup Mixed Herbs dill, basil, parsley
- 1 teaspoon Lemon Zest
- 1 clove Garlic grated
- 2 tablespoons Toasted Sesame Seeds
- 0.5 cup Feta Cheese crumbled
- 1 cups Tzatziki Sauce to 2 cups
- 0.5 cup Garlic Tahini
Instructions
- Mix olive oil, shallots, garlic, oregano, chili powder, honey, harissa sauce, lemon zest, salt, and pepper with chicken chunks in a bowl. Toss to coat.
- Preheat the oven to 450°F.
- Thread the chicken onto skewers and arrange on a baking sheet. Bake for 20-25 minutes until charred and cooked through.
- Toss potatoes with olive oil, garlic powder, cayenne, and pepper. Spread in an even layer on a sheet pan and bake for 15-20 minutes. Flip and bake for another 15 minutes.
- Combine herbs, lemon zest, garlic, sesame seeds, and feta in a bowl. Toss the warm fries with the mixture and season with salt.
- Serve the chicken skewers and fries with Tzatziki sauce and garlic tahini on the side.
