Baked Strawberry Glazed Doughnut

Ingredients
- 4 tablespoons butter melted
- 2 eggs large
- 1 tablespoon vanilla extract
- 0.25 cup honey
- 0.25 cup strawberry jam
- 0.5 cup milk
- 2 cups flour whole wheat pastry or all purpose
- 1 tablespoon strawberry powder
- 1.5 teaspoons baking powder
- 1 teaspoon baking soda
- 0.5 teaspoon salt kosher
- 2 ounces cream cheese
- 2 cups powdered sugar
- 3 tablespoons strawberry powder
- 0.25 cup hot milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350° F. Grease a 6-cup doughnut pan or 12-cup muffin pan with melted butter.
- In a mixing bowl, stir together the melted butter, eggs, vanilla extract, honey, strawberry jam, and milk until combined. Add the flour, strawberry powder, baking powder, baking soda, and salt, mix until just combined.
- Divide the batter evenly among the prepared pan, filling each cavity 1/2-2/3 of the way full. Bake for 10-12 minutes, until just set.
- Remove the doughnuts from the oven and let them cool for 5 minutes, then run a knife around the edges to release and invert the pan.
- To make the glaze, mix cream cheese, powdered sugar, 2-3 tablespoons strawberry powder, hot milk, and vanilla extract in a bowl. Add additional milk to thin, as needed. Dip or drizzle the doughnuts into the glaze.
- Let the glazed doughnuts set for 5 minutes before serving.
