Boursin Chicken Meatballs with Cheesy Asparagus Orzo

Ingredients

  • 1 lb ground chicken
  • 1 egg
  • 5.3 oz Boursin cheese one round
  • 1 lemon lemon zest
  • 0.5 cup Italian breadcrumbs
  • 0.5 tsp kosher salt
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil
  • 1 tbsp olive oil
  • 4 cups bone broth
  • 1 cup orzo
  • 1 lb asparagus
  • 0.5 cup Parmesan cheese
  • 2 tbsp butter
  • 0.5 tbsp lemon juice
  • 0 garnish fresh basil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, egg, Boursin cheese, lemon zest, Italian breadcrumbs, kosher salt, Italian seasoning, and a tablespoon of olive oil. Mix until all ingredients are just combined.
  3. Form the mixture into golf ball-sized meatballs and place them on a lined baking sheet. Drizzle the remaining olive oil over the meatballs.
  4. Bake the meatballs in the preheated oven for 25 to 30 minutes or until they are fully cooked and lightly golden.
  5. Meanwhile, in a large pot over medium heat, bring bone broth to a simmer. Add orzo and cook according to package instructions until al dente.
  6. During the last 5 minutes of cooking, add chopped asparagus to the orzo. Once cooked, stir in Parmesan cheese, butter, and lemon juice.
  7. Serve the meatballs over the cheesy asparagus orzo and enjoy!
