Apple Ricotta Cake

Apple Ricotta Cake

Ingredients

  • 320 g ricotta firm, drained
  • 250 g caster sugar
  • 2 tsp vanilla extract
  • 1 whole lemon zest
  • 130 g melted butter
  • 3 eggs beaten
  • 120 g plain flour gluten-free
  • 50 g almond meal
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 2 apples medium, cored and finely sliced
  • 0.25 cup flaked almonds
  • 1 tbsp caster sugar

Instructions

  1. Preheat oven to 180C (356F) and grease and line a 20cm (8-inch) round cake tin.
  2. In a mixing bowl, add the ricotta, caster sugar, vanilla, and lemon zest. Mix with electric beaters until smooth.
  3. Add the cooled melted butter and mix until combined. Beat in the eggs one at a time.
  4. Sift the flour, almond meal, baking powder, and salt into the mixture and gently fold to combine.
  5. Pour the mixture into the prepared cake tin.
  6. Arrange the apple slices on top of the cake then sprinkle over the flaked almonds and the extra tablespoon of caster sugar.
  7. Bake in the preheated oven for 50-60 minutes. Allow to cool slightly in the tin before removing.
