Apple Ricotta Cake

Ingredients
- 320 g ricotta firm, drained
- 250 g caster sugar
- 2 tsp vanilla extract
- 1 whole lemon zest
- 130 g melted butter
- 3 eggs beaten
- 120 g plain flour gluten-free
- 50 g almond meal
- 1 tsp baking powder
- 0.5 tsp salt
- 2 apples medium, cored and finely sliced
- 0.25 cup flaked almonds
- 1 tbsp caster sugar
Instructions
- Preheat oven to 180C (356F) and grease and line a 20cm (8-inch) round cake tin.
- In a mixing bowl, add the ricotta, caster sugar, vanilla, and lemon zest. Mix with electric beaters until smooth.
- Add the cooled melted butter and mix until combined. Beat in the eggs one at a time.
- Sift the flour, almond meal, baking powder, and salt into the mixture and gently fold to combine.
- Pour the mixture into the prepared cake tin.
- Arrange the apple slices on top of the cake then sprinkle over the flaked almonds and the extra tablespoon of caster sugar.
- Bake in the preheated oven for 50-60 minutes. Allow to cool slightly in the tin before removing.
