Cinnamon Roll Butter Swim Biscuit

Ingredients

  • 0.5 cup salted butter
  • 0.5 cup light brown sugar
  • 1 tablespoon ground cinnamon
  • 1 pinch kosher salt
  • 1 teaspoon vanilla extract
  • 0.67 portion cinnamon goo
  • 2.5 cups all-purpose flour
  • 2 teaspoons kosher salt
  • 4 teaspoons baking powder
  • 0.33 cup granulated sugar
  • 2 cups full-fat buttermilk
  • 1 teaspoon vanilla extract
  • 1 batch biscuit batter
  • 0.33 portion remaining cinnamon goo
  • 2 tablespoons granulated sugar
  • 0.5 teaspoon ground cinnamon
  • 1 cup powdered sugar
  • 2 tablespoons milk or cream
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 batch glaze

Instructions

  1. In a medium bowl, melt butter, then stir in brown sugar, cinnamon, salt, and vanilla until smooth.
  2. Pour ⅔ of the cinnamon goo into an 8×8 pan and heat in a 450°F oven until it’s starting to bubble (4–5 minutes). Reserve remaining goo.
  3. Whisk flour, salt, baking powder, and sugar in a large bowl.
  4. Add buttermilk and vanilla; stir just until combined (thick and lumpy is good).
  5. Pour batter over hot cinnamon goo in the pan (do not stir).
  6. Drizzle remaining cinnamon goo on top and gently swirl.
  7. Sprinkle cinnamon sugar evenly over the top and score into 9 squares.
  8. Bake in the oven for 20–26 minutes, rotating once, until golden and bubbling. Tent with foil if needed to prevent over-browning.
  9. Whisk powdered sugar, milk, vanilla, and salt until smooth to make the glaze.
  10. Cool biscuits for 5–10 minutes, drizzle with glaze, and serve warm.
