Cinnamon Roll Butter Swim Biscuit

Ingredients
- 0.5 cup salted butter
- 0.5 cup light brown sugar
- 1 tablespoon ground cinnamon
- 1 pinch kosher salt
- 1 teaspoon vanilla extract
- 0.67 portion cinnamon goo
- 2.5 cups all-purpose flour
- 2 teaspoons kosher salt
- 4 teaspoons baking powder
- 0.33 cup granulated sugar
- 2 cups full-fat buttermilk
- 1 teaspoon vanilla extract
- 1 batch biscuit batter
- 0.33 portion remaining cinnamon goo
- 2 tablespoons granulated sugar
- 0.5 teaspoon ground cinnamon
- 1 cup powdered sugar
- 2 tablespoons milk or cream
- 1 teaspoon vanilla extract
- 1 pinch salt
- 1 batch glaze
Instructions
- In a medium bowl, melt butter, then stir in brown sugar, cinnamon, salt, and vanilla until smooth.
- Pour ⅔ of the cinnamon goo into an 8×8 pan and heat in a 450°F oven until it’s starting to bubble (4–5 minutes). Reserve remaining goo.
- Whisk flour, salt, baking powder, and sugar in a large bowl.
- Add buttermilk and vanilla; stir just until combined (thick and lumpy is good).
- Pour batter over hot cinnamon goo in the pan (do not stir).
- Drizzle remaining cinnamon goo on top and gently swirl.
- Sprinkle cinnamon sugar evenly over the top and score into 9 squares.
- Bake in the oven for 20–26 minutes, rotating once, until golden and bubbling. Tent with foil if needed to prevent over-browning.
- Whisk powdered sugar, milk, vanilla, and salt until smooth to make the glaze.
- Cool biscuits for 5–10 minutes, drizzle with glaze, and serve warm.
