Spring Roll Salad With Peanut Dressing
An easy and delicious spring roll salad with a flavorful peanut dressing, perfect for meal prep.

Ingredients
- 1.5 lbs shrimp
- 1 tbsp olive oil
- 1 tbsp Daily Blend seasoning
- 0.25 cup peanut butter
- 1 tbsp olive oil
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp rice vinegar
- 2 tsp sriracha
- 2 cloves garlic cloves
- 1 tsp fresh ginger
- 1 lime lime juice
- 1 tbsp water
- 100 grams rice noodles
- 1.5 cups purple cabbage
- 2 small carrots
- 2 pieces mini cucumbers
- 1 small jalapeño
- 1 optional avocado
- 0.25 cup green onions
- 0.25 cup cilantro
- 0.25 cup mint
- 0.5 cup chopped peanuts
Instructions
- Peel and devein 1.5 lbs of shrimp.
- Heat 1 tbsp of olive oil in a pan over medium heat. Add the shrimp and 1 tbsp of Daily Blend seasoning. Cook until shrimp are pink and cooked through.
- In a measuring cup or blender, combine 1/4 cup peanut butter, 1 tbsp olive oil, 1 tbsp soy sauce, 1 tbsp honey, 1 tsp rice vinegar, 2 tsp sriracha, 2 garlic cloves, 1 tsp fresh ginger, and the juice of 1 lime.
- Blend the peanut sauce mixture using an immersion blender until smooth. Add 1-2 tbsp of water to thin if necessary.
- Cook and cool 100 grams of rice noodles according to package instructions.
- Slice 1.5 cups of purple cabbage, 2 small carrots, 2 mini cucumbers, and 1 small jalapeño. Optionally, slice 1 avocado.
- Chop 1/4 cup of green onions, 1/4 cup of cilantro, and 1/4 cup of mint.
- Combine the cooked shrimp, rice noodles, sliced vegetables, and chopped herbs in a large bowl.
- Pour the peanut sauce over the salad and toss to combine.
- Optionally, top with 1/2 cup of chopped peanuts. Serve immediately or store in the fridge for meal prep.
