Ingredients
- 1 cup dried cherries
- 1 cup hot water
- 4 pieces bone-in pork chops
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 2 cloves garlic
- 1 tablespoon fresh rosemary
- 1 cup chicken broth
Instructions
- Rehydrate the dried cherries by placing them in a bowl and covering them with hot water. Let them sit until plump and juicy.
- Season the pork chops with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat.
- Add the pork chops to the skillet and sear until golden brown, about 4-5 minutes per side.
- Remove the pork chops from the skillet and set aside.
- Add minced garlic and chopped rosemary to the skillet and sauté until fragrant, about 30 seconds.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Drain the cherries and add them to the skillet along with any juices.
- Return the pork chops to the skillet, reduce heat to low, and simmer until the pork is cooked through, about 10 minutes.
- Serve the pork chops with the cherry-rosemary sauce spooned over the top.
