Ingredients
- 2 cups jasmine rice
- 3.5 cups water
- 1 lime lime juice
- 1 teaspoon salt
- 3.5 tablespoons chopped cilantro
- 1 cup mayonnaise
- 3 tablespoons chipotle peppers
- 1 lime lime juice
- 2 pieces garlic cloves
- 1 can black beans
- 2 tablespoons taco seasoning
- 1 piece jalapeño
- 1 cup lettuce
- 0.25 piece onion
- 2 pieces tomatoes
- 3 tablespoons chopped cilantro
- 1 piece jalapeño
- 5 pieces burrito size tortillas
- 1 bottle cheddar liquid cheese
- 0.25 cup cilantro lime rice
- 3 tablespoons seasoned black beans
- 2 cups shredded cheddar cheese
Instructions
- Make rice on the stove or in a rice cooker. When rice is completely cooked and still warm, add juice of one lime, chopped cilantro, and salt, then gently mix.
- Blend one cup of mayonnaise, 2-3 chipotle peppers or 3 tablespoons of chipotle peppers and sauce, juice of a lime, and 2 garlic cloves to make chipotle mayo.
- Heat up one can of black beans on medium heat, add taco seasoning, and diced jalapeño, then mix until well incorporated.
- Chop lettuce, onions, tomatoes, cilantro, and jalapeños.
- Assemble your burrito by heating each burrito for 30 seconds in the microwave before assembling for easy folding.
- Drizzle on cheese sauce, then layer 1/4 cup of cilantro lime rice, 2-3 tablespoons of seasoned black beans, lettuce, tomato, onion, cheddar cheese, jalapeño, cilantro, and chipotle mayo.
- Fold over, then fold both sides in and then fold over again gently but tightly.
- Toast on a skillet over low heat.
