Strawberry Crunch Cheesecake Bars

Ingredients

  • 16 pieces Golden Oreos
  • 4 tablespoons unsalted butter
  • 2 blocks cream cheese
  • 0.75 cup granulated sugar
  • 2 pieces large eggs
  • 0.25 cup sour cream
  • 1 teaspoon vanilla extract
  • 0.33 cup strawberry puree
  • 1 optional red food coloring
  • 18 pieces Golden Oreos
  • 0.5 cup freeze-dried strawberries
  • 4 tablespoons melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place 16 Golden Oreos in a food processor and pulse until finely crushed.
  3. Add 4 tablespoons of melted unsalted butter to the crushed Oreos and mix until combined.
  4. Press the Oreo mixture into the bottom of a lined baking pan to form the crust. Bake for 10 minutes and let it cool.
  5. In a large bowl, beat 2 blocks of room temperature cream cheese until smooth.
  6. Add ¾ cup granulated sugar to the cream cheese and mix until well combined.
  7. Add 2 large room temperature eggs, one at a time, mixing well after each addition.
  8. Mix in 1/4 cup sour cream and 1 teaspoon vanilla extract until smooth.
  9. Gently fold in 1/3 cup of strawberry puree and add red food coloring if desired.
  10. Pour the cheesecake filling over the cooled crust and bake for 20 minutes or until set. Let it cool completely.
  11. For the topping, crush 18 Golden Oreos and ½ cup freeze-dried strawberries in a food processor.
  12. Mix the crushed Oreos and strawberries with 4 tablespoons of melted butter.
  13. Sprinkle the strawberry crunch topping evenly over the cooled cheesecake bars. Chill in the refrigerator for at least 2 hours before serving.
