Strawberry Crunch Cheesecake Bars
Delicious Strawberry Crunch Cheesecake bars with a Golden Oreo crust and a crunchy strawberry topping.

Ingredients
- 16 pieces Golden Oreos
- 4 tablespoons unsalted butter
- 2 blocks cream cheese
- 0.75 cup granulated sugar
- 2 pieces large eggs
- 0.25 cup sour cream
- 1 teaspoon vanilla extract
- 0.33 cup strawberry puree
- 1 optional red food coloring
- 18 pieces Golden Oreos
- 0.5 cup freeze-dried strawberries
- 4 tablespoons melted butter
Instructions
- Preheat your oven to 350°F (175°C).
- Place 16 Golden Oreos in a food processor and pulse until finely crushed.
- Add 4 tablespoons of melted unsalted butter to the crushed Oreos and mix until combined.
- Press the Oreo mixture into the bottom of a lined baking pan to form the crust. Bake for 10 minutes and let it cool.
- In a large bowl, beat 2 blocks of room temperature cream cheese until smooth.
- Add ¾ cup granulated sugar to the cream cheese and mix until well combined.
- Add 2 large room temperature eggs, one at a time, mixing well after each addition.
- Mix in 1/4 cup sour cream and 1 teaspoon vanilla extract until smooth.
- Gently fold in 1/3 cup of strawberry puree and add red food coloring if desired.
- Pour the cheesecake filling over the cooled crust and bake for 20 minutes or until set. Let it cool completely.
- For the topping, crush 18 Golden Oreos and ½ cup freeze-dried strawberries in a food processor.
- Mix the crushed Oreos and strawberries with 4 tablespoons of melted butter.
- Sprinkle the strawberry crunch topping evenly over the cooled cheesecake bars. Chill in the refrigerator for at least 2 hours before serving.
