Banana Bread Coffee Cake With Brown Butter
If comfort had a flavor, it would be banana bread and coffee cake swirled together with brown butter.

Ingredients
- 10 tbsp unsalted butter
- 1 cup light brown sugar
- 1.25 cup all-purpose flour
- 0.5 tsp cinnamon
- 1 pinch salt
- 0.5 cup unsalted butter
- 10 tbsp browned butter
- 0.5 cup whole milk
- 0.67 cup plain Greek yogurt
- 2 eggs
- 1 tbsp vanilla extract
- 3 large ripe bananas
- 1 cup light brown sugar
- 2 cup all-purpose flour
- 0.5 tsp baking soda
- 2 tsp baking powder
- 0.5 tsp salt
- 1 tsp cinnamon
- 1 cup powdered sugar
- 2 tbsp heavy cream
- 0.25 tsp vanilla
- 1 pinch salt
Instructions
- In a small saucepan over medium-high heat, brown the butter, stirring constantly until it turns golden and smells nutty. Transfer to a heat-safe bowl and let cool slightly.
- In a medium bowl, mix together the streusel ingredients until coarse crumbs form. Set aside.
- In a large bowl, whisk together the browned butter, milk, yogurt, eggs, vanilla, mashed bananas, and brown sugar until well combined.
- Add the dry ingredients and gently fold until just incorporated.
- Line and grease an 8x8 baking pan.
- Spread half of the batter into the pan, sprinkle with a layer of streusel, add the remaining batter, and finish with the rest of the streusel on top.
- Bake at 375°F for 55–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool before adding the glaze.
- In a small bowl, mix together the glaze ingredients until smooth.
- Drizzle the glaze over the cooled cake and enjoy.
