Cinnamon Roll Cake

Ingredients
- 360 g all-purpose flour
- 1.5 tbsp baking powder
- 0.75 tsp salt
- 1.5 tsp cornstarch
- 170 g unsalted butter
- 90 g brown sugar
- 90 g white sugar
- 85 g olive oil
- 3 eggs
- 1 egg white
- 2.25 tbsp vanilla extract
- 90 ml milk
- 90 g Greek yogurt
- 2 tbsp brown sugar
- 3.5 tsp cinnamon
- 1.5 tbsp heavy cream
- 80 g all-purpose flour
- 50 g brown sugar
- 40 g cold butter
- 1 tsp ground cinnamon
- 1 tsp walnuts or almonds
- 0 cream cheese
- 0 butter
- 0 powdered sugar
- 0 vanilla
- 0 cream
Instructions
- Preheat the oven to 165–170 °C. Grease a 9” round pan and line the bottom with parchment paper.
- In a bowl, mix the flour, baking powder, salt, and cornstarch.
- In another bowl, beat the butter and sugars together. Add olive oil, incorporate eggs and egg white, and add vanilla.
- Add the dry ingredients to the wet ingredients, alternating with milk and Greek yogurt. The batter should be thick but fluid. If too dense, add 1–2 extra tbsp of milk.
- Separate 1/2 of the batter and turn it into the cinnamon batter by adding brown sugar, cinnamon, and heavy cream. It should be slightly more fluid than the white batter.
- For the streusel, mix flour, sugar, and cinnamon. Add cold butter and rub with fingers or a fork until crumbly. Add nuts if using.
- Drop large dollops of white batter into the pan, add smaller dollops of cinnamon batter, and repeat until all batter is used.
- Using a knife or skewer, make 2 gentle spirals without reaching the bottom. Add the streusel on top of the cake.
- Bake at 340°F (170°C) for 60–70 minutes. Check at 40 minutes. If it browns too much, cover with foil. A toothpick should come out clean in the white areas.
- Once completely cool, frost with cream cheese, butter, powdered sugar, vanilla, and a splash of cream. Be generous and let it drip down the sides.
