Caesar Pasta Salad

Ingredients

  • 0.5 lb pasta of choice
  • 0 salt
  • 0 water
  • 1 tbsp capers
  • 0.75 cup mayonnaise
  • 2 cloves freshly grated garlic
  • 1 whole small lemon lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp soy sauce
  • 0.5 cup freshly grated Parmesan cheese
  • 0 water
  • 0 salt
  • 0 black pepper
  • 3 handfuls washed & chopped romaine
  • 0.75 cup large breadcrumbs
  • 0 freshly grated Parmesan cheese
  • 0 black pepper
  • 3 handfuls washed & chopped romaine

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Rinse the pasta in cold water and let cool completely.
  2. Grind up the capers before making the dressing.
  3. Combine capers, mayo, freshly grated garlic, lemon juice, Dijon mustard, soy sauce, and freshly grated Parmesan cheese in a bowl or food processor to make the dressing. Use water to thin it out to desired consistency.
  4. Season the dressing with salt and black pepper to taste.
  5. Combine the desired amount of dressing with the cooked pasta, washed and chopped romaine, breadcrumbs, freshly grated Parmesan cheese, and black pepper.
  6. If making ahead of time, don't add the lettuce in until right before serving to prevent soggy greens.
