Caesar Pasta Salad
A delicious Caesar pasta salad with homemade dressing, perfect for sunny days. Customize with your choice of pasta and add chicken for extra protein.

Ingredients
- 0.5 lb pasta of choice
- 0 salt
- 0 water
- 1 tbsp capers
- 0.75 cup mayonnaise
- 2 cloves freshly grated garlic
- 1 whole small lemon lemon juice
- 1 tbsp Dijon mustard
- 1 tbsp soy sauce
- 0.5 cup freshly grated Parmesan cheese
- 0 water
- 0 salt
- 0 black pepper
- 3 handfuls washed & chopped romaine
- 0.75 cup large breadcrumbs
- 0 freshly grated Parmesan cheese
- 0 black pepper
- 3 handfuls washed & chopped romaine
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Rinse the pasta in cold water and let cool completely.
- Grind up the capers before making the dressing.
- Combine capers, mayo, freshly grated garlic, lemon juice, Dijon mustard, soy sauce, and freshly grated Parmesan cheese in a bowl or food processor to make the dressing. Use water to thin it out to desired consistency.
- Season the dressing with salt and black pepper to taste.
- Combine the desired amount of dressing with the cooked pasta, washed and chopped romaine, breadcrumbs, freshly grated Parmesan cheese, and black pepper.
- If making ahead of time, don't add the lettuce in until right before serving to prevent soggy greens.
