Chili Lime Shrimp Bowls with Mango-Avocado Salsa

Ingredients

  • 1 pound raw shrimp
  • 1 tablespoon chili powder
  • 0.5 teaspoon cumin
  • 1 teaspoon salt
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon black pepper
  • 0 cayenne optional for extra spice
  • 1 shrimp seasoned
  • 1 cup mangos diced
  • 1 cup avocado diced
  • 0.25 cup red onion diced
  • 1 jalapeño minced
  • 0.25 cup cilantro chopped
  • 1 tablespoon lime juice
  • 2 cups white rice
  • 1 cup shredded cabbage
  • 1 wedge lime
  • 0 tortilla chips optional, for serving

Instructions

  1. In a bowl, combine shrimp with chili powder, cumin, salt, smoked paprika, garlic powder, black pepper, and cayenne if desired. Toss until shrimp is evenly coated.
  2. Heat a skillet over medium-high heat and add the seasoned shrimp. Saute until shrimp is pink and cooked through, about 3-4 minutes per side.
  3. In a separate bowl, prepare the salsa by combining diced mangos, avocado, red onion, jalapeño, cilantro, and lime juice.
  4. Prepare the bowls. Layer white rice, shredded cabbage, and cooked shrimp. Top with mango-avocado salsa. Serve with a wedge of lime and optional tortilla chips.
