Chili Lime Shrimp Bowls with Mango-Avocado Salsa

Ingredients
- 1 pound raw shrimp
- 1 tablespoon chili powder
- 0.5 teaspoon cumin
- 1 teaspoon salt
- 0.5 teaspoon smoked paprika
- 0.5 teaspoon garlic powder
- 0.25 teaspoon black pepper
- 0 cayenne optional for extra spice
- 1 shrimp seasoned
- 1 cup mangos diced
- 1 cup avocado diced
- 0.25 cup red onion diced
- 1 jalapeño minced
- 0.25 cup cilantro chopped
- 1 tablespoon lime juice
- 2 cups white rice
- 1 cup shredded cabbage
- 1 wedge lime
- 0 tortilla chips optional, for serving
Instructions
- In a bowl, combine shrimp with chili powder, cumin, salt, smoked paprika, garlic powder, black pepper, and cayenne if desired. Toss until shrimp is evenly coated.
- Heat a skillet over medium-high heat and add the seasoned shrimp. Saute until shrimp is pink and cooked through, about 3-4 minutes per side.
- In a separate bowl, prepare the salsa by combining diced mangos, avocado, red onion, jalapeño, cilantro, and lime juice.
- Prepare the bowls. Layer white rice, shredded cabbage, and cooked shrimp. Top with mango-avocado salsa. Serve with a wedge of lime and optional tortilla chips.
