Caramelized Apricots Over Whipped Ricotta

Caramelized Apricots Over Whipped Ricotta

Ingredients

  • 16 pieces apricots halved and pitted
  • 0.33 cup honey
  • 0.5 cup water
  • 1 cup Kite Hill Dairy-Free Ricotta unsweetened plain
  • 0.67 cup Kite Hill Dairy-Free Yogurt unsweetened plain
  • 0.33 cup honey
  • 0.5 lemon lemon juice
  • 0.5 lemon lemon zest
  • 1 pinch salt
  • 0 balsamic vinegar aged
  • 0 mint leaves

Instructions

  1. Preheat a pan over medium-high heat and place the apricot halves cut side up. Pour in 1/3 cup of honey and 1/2 cup of water.
  2. Cook the apricots until the bottoms start to brown, approximately 4-5 minutes.
  3. Flip the apricots so the cut side is down and continue cooking until the syrup thickens and apricots are soft.
  4. While the apricots are cooking, whisk together the dairy-free ricotta, yogurt, honey, juice, and zest of half a lemon, and a pinch of salt until smooth.
  5. Spread the whipped ricotta mixture along the bottom of the serving platter.
  6. Spoon the caramelized apricots over the whipped ricotta, drizzle with the remaining syrup from the pan.
  7. Finish with a drizzle of aged balsamic vinegar and sprinkle with fresh mint leaves.
