Caramelized Apricots Over Whipped Ricotta
A delightful dairy-free dessert featuring caramelized apricots topped over a luscious whipped dairy-free ricotta base, finished with balsamic vinegar and fresh mint.

Ingredients
- 16 pieces apricots halved and pitted
- 0.33 cup honey
- 0.5 cup water
- 1 cup Kite Hill Dairy-Free Ricotta unsweetened plain
- 0.67 cup Kite Hill Dairy-Free Yogurt unsweetened plain
- 0.33 cup honey
- 0.5 lemon lemon juice
- 0.5 lemon lemon zest
- 1 pinch salt
- 0 balsamic vinegar aged
- 0 mint leaves
Instructions
- Preheat a pan over medium-high heat and place the apricot halves cut side up. Pour in 1/3 cup of honey and 1/2 cup of water.
- Cook the apricots until the bottoms start to brown, approximately 4-5 minutes.
- Flip the apricots so the cut side is down and continue cooking until the syrup thickens and apricots are soft.
- While the apricots are cooking, whisk together the dairy-free ricotta, yogurt, honey, juice, and zest of half a lemon, and a pinch of salt until smooth.
- Spread the whipped ricotta mixture along the bottom of the serving platter.
- Spoon the caramelized apricots over the whipped ricotta, drizzle with the remaining syrup from the pan.
- Finish with a drizzle of aged balsamic vinegar and sprinkle with fresh mint leaves.
