Slow Cooker Beef Stew
A hearty and comforting beef stew made easy in the slow cooker.

Ingredients
- 1 kg beef chuck
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 kg beef chuck
- 2 large onions
- 3 medium carrots
- 4 medium potatoes
- 3 pieces garlic cloves
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 2 tablespoons cornstarch
- 2 tablespoons water
- 2 tablespoons fresh parsley
Instructions
- Season the beef with salt and pepper. Heat a large skillet over medium-high heat and add the olive oil.
- Brown the beef in batches in the skillet, ensuring each piece is seared on all sides.
- Transfer the browned beef to the slow cooker.
- Add the onions, carrots, and potatoes to the skillet and sauté for 5 minutes until slightly softened.
- Stir in the garlic and cook for an additional minute.
- Transfer the vegetables to the slow cooker with the beef.
- Pour the beef broth, tomato paste, Worcestershire sauce, and thyme over the beef and vegetables in the slow cooker.
- Cover and cook on low for 8 hours, or until the beef is tender and the vegetables are cooked through.
- In the last 30 minutes of cooking, mix the cornstarch with water and stir it into the stew to thicken the sauce.
- Serve the stew hot, garnished with fresh parsley if desired.
