Braised Winter Squash Wedges

Ingredients

  • 1 whole winter squash
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 whole garlic cloves
  • 3 whole fresh thyme sprigs
  • 1 cup vegetable broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the winter squash into wedges, removing the seeds.
  3. Heat olive oil in a large ovenproof skillet over medium heat.
  4. Add the squash wedges to the skillet and cook until they are golden brown on both sides, about 5 minutes per side.
  5. Season the squash with salt and pepper to taste.
  6. Add garlic cloves and fresh thyme sprigs to the skillet.
  7. Pour vegetable broth into the skillet and bring to a simmer.
  8. Transfer the skillet to the preheated oven and braise the squash until tender, about 30 minutes.
  9. Remove the skillet from the oven and let the squash rest for 5 minutes before serving.
  10. Serve the braised squash wedges warm, garnished with additional thyme if desired.
