Braised Winter Squash Wedges

Ingredients
- 1 whole winter squash
- 2 tablespoons olive oil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 4 whole garlic cloves
- 3 whole fresh thyme sprigs
- 1 cup vegetable broth
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the winter squash into wedges, removing the seeds.
- Heat olive oil in a large ovenproof skillet over medium heat.
- Add the squash wedges to the skillet and cook until they are golden brown on both sides, about 5 minutes per side.
- Season the squash with salt and pepper to taste.
- Add garlic cloves and fresh thyme sprigs to the skillet.
- Pour vegetable broth into the skillet and bring to a simmer.
- Transfer the skillet to the preheated oven and braise the squash until tender, about 30 minutes.
- Remove the skillet from the oven and let the squash rest for 5 minutes before serving.
- Serve the braised squash wedges warm, garnished with additional thyme if desired.
