Classic Lemon & Sugar CrêPes

Ingredients
- 1 cup all-purpose flour
- 1 pinch salt
- 2 large eggs
- 1.25 cups milk
- 2 tablespoons butter
- 1 teaspoon butter
- 1 ladleful crêpe batter
- 1 teaspoon sugar
- 1 tablespoon lemon juice
Instructions
- In a large mixing bowl, whisk together the flour and a pinch of salt.
- Make a well in the center of the flour mixture and crack in the eggs.
- Gradually pour in the milk, whisking continuously to form a smooth batter.
- Add the melted butter to the batter and whisk until fully combined.
- Heat a non-stick frying pan over medium heat and lightly grease with a little butter.
- Pour a ladleful of batter into the pan, swirling to evenly coat the base.
- Cook for 1-2 minutes until the edges start to lift and the underside is golden brown.
- Flip the crêpe and cook for another minute until golden.
- Transfer the crêpe to a plate and sprinkle with sugar and a squeeze of lemon juice.
- Repeat with the remaining batter, serving the crêpes warm.
