Classic Lemon & Sugar CrêPes

Ingredients

  • 1 cup all-purpose flour
  • 1 pinch salt
  • 2 large eggs
  • 1.25 cups milk
  • 2 tablespoons butter
  • 1 teaspoon butter
  • 1 ladleful crêpe batter
  • 1 teaspoon sugar
  • 1 tablespoon lemon juice

Instructions

  1. In a large mixing bowl, whisk together the flour and a pinch of salt.
  2. Make a well in the center of the flour mixture and crack in the eggs.
  3. Gradually pour in the milk, whisking continuously to form a smooth batter.
  4. Add the melted butter to the batter and whisk until fully combined.
  5. Heat a non-stick frying pan over medium heat and lightly grease with a little butter.
  6. Pour a ladleful of batter into the pan, swirling to evenly coat the base.
  7. Cook for 1-2 minutes until the edges start to lift and the underside is golden brown.
  8. Flip the crêpe and cook for another minute until golden.
  9. Transfer the crêpe to a plate and sprinkle with sugar and a squeeze of lemon juice.
  10. Repeat with the remaining batter, serving the crêpes warm.
