Instructions
- Preheat the oven to 400°F (200°C). Spread the cooked and cooled jasmine rice on a baking sheet, drizzle with olive oil, and sprinkle paprika, oregano, and garlic powder. Toss well.
- Bake the rice in the oven for 30-35 minutes, tossing halfway through. Watch closely to prevent burning.
- While the rice bakes, prepare the chicken. Heat olive oil in a skillet over medium heat. Season chicken thighs with turmeric, cumin, cinnamon, garlic powder, and black pepper, mixing well.
- Cook the chicken in the skillet until fully cooked through, approximately 6-8 minutes, then remove from heat.
- Prepare the salad base by chopping the cucumbers, halving the tomatoes, finely slicing the red onion, chopping the dill pickles, and mint.
- Make the creamy lemon-tahini dressing by blending Greek yogurt, tahini, olive oil, lemon juice, minced garlic, and kosher salt. Add honey or maple syrup if desired for sweetness.
- Assemble the salad by adding the cucumber, tomatoes, red onion, pickles, and mint to a large bowl. Layer the cooked chicken on top, followed by the crispy rice. Drizzle with the lemon-tahini dressing. Toss gently and serve immediately.
