Broiled Salmon Tostadas with Jalapeño Ranch

Ingredients

  • 1 sheet parchment paper
  • 1.5 lbs salmon fillet
  • 1 tsp coconut sugar
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 1 cup Greek yogurt full fat
  • 1 jalapeño pepper stems and seeds removed
  • 0.25 cup cilantro stems removed
  • 1 lime juiced
  • 2 cloves garlic
  • 0.5 tsp onion powder
  • 1 tsp dried dill
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 cups green cabbage shredded
  • 2 tbsp rice wine vinegar
  • 0.25 tsp salt
  • 12 pieces tostada shells
  • 1 cup marinated onions recipe from previous reel
  • 0.25 cup cilantro chopped

Instructions

  1. Preheat your broiler to high. Line a baking sheet with parchment paper.
  2. Prepare the salmon by patting it dry with paper towels. Mix together the coconut sugar, paprika, cumin, garlic powder, and salt in a bowl.
  3. Rub the seasoning evenly over the salmon. Place the salmon on the prepared baking sheet and broil for 8-9 minutes or until cooked to your desired level of doneness.
  4. While the salmon is broiling, prepare the jalapeño ranch. Add Greek yogurt, jalapeño, cilantro, lime juice, garlic, onion powder, dried dill, salt, and pepper to a blender and blend until smooth.
  5. Toss shredded cabbage lightly in rice wine vinegar with a pinch of salt.
  6. Assemble the tostadas by placing the tostada shells on a serving plate. Layer with shredded cabbage, flaky salmon, marinated onions, and drizzle with jalapeño ranch. Garnish with chopped cilantro.
