Chicken Vegetable Soup

Ingredients
- 1 tablespoon olive oil
- 1 whole onion
- 2 whole carrots
- 2 whole celery stalks
- 2 whole garlic cloves
- 6 cups chicken broth
- 1 pound boneless, skinless chicken breasts
- 1 cup frozen peas
- 1 cup corn kernels
- 0 to taste salt
- 0 to taste pepper
- 0 optional fresh parsley
Instructions
- Heat 1 tablespoon of olive oil in a large pot over medium heat.
- Add 1 chopped onion, 2 chopped carrots, and 2 chopped celery stalks. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
- Add 2 minced garlic cloves and cook for 1 minute until fragrant.
- Pour in 6 cups of chicken broth and bring to a boil.
- Add 1 pound of boneless, skinless chicken breasts, reduce heat to a simmer, and cook until the chicken is cooked through, about 15 minutes.
- Remove the chicken from the pot and shred it with two forks.
- Return the shredded chicken to the pot along with 1 cup of frozen peas and 1 cup of corn kernels.
- Season the soup with salt and pepper to taste.
- Simmer for an additional 5 minutes to heat the peas and corn.
- Serve hot, garnished with chopped fresh parsley if desired.
