Chicken Vegetable Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 whole onion
  • 2 whole carrots
  • 2 whole celery stalks
  • 2 whole garlic cloves
  • 6 cups chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 1 cup frozen peas
  • 1 cup corn kernels
  • 0 to taste salt
  • 0 to taste pepper
  • 0 optional fresh parsley

Instructions

  1. Heat 1 tablespoon of olive oil in a large pot over medium heat.
  2. Add 1 chopped onion, 2 chopped carrots, and 2 chopped celery stalks. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  3. Add 2 minced garlic cloves and cook for 1 minute until fragrant.
  4. Pour in 6 cups of chicken broth and bring to a boil.
  5. Add 1 pound of boneless, skinless chicken breasts, reduce heat to a simmer, and cook until the chicken is cooked through, about 15 minutes.
  6. Remove the chicken from the pot and shred it with two forks.
  7. Return the shredded chicken to the pot along with 1 cup of frozen peas and 1 cup of corn kernels.
  8. Season the soup with salt and pepper to taste.
  9. Simmer for an additional 5 minutes to heat the peas and corn.
  10. Serve hot, garnished with chopped fresh parsley if desired.
