Cranberry Oat Cookies

Cranberry Oat Cookies

Ingredients

  • 0.5 cup butter soft
  • 1 cup sugar
  • 1 egg
  • 1.5 tsp vanilla extract
  • 0.5 tsp salt
  • 1 tsp baking powder
  • 0.75 tsp cinnamon
  • 0.75 cup all purpose flour
  • 1.5 cup oats
  • 0.5 cup white chocolate chopped
  • 0.75 cup dried cranberries

Instructions

  1. In a large bowl, cream together the soft butter and sugar until the mixture becomes light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. Add the salt, baking powder, and cinnamon, followed by the flour. Mix until just combined and no streaks remain.
  4. Gently fold in the oats, white chocolate, and dried cranberries by hand.
  5. Chill the dough in the refrigerator for at least 2 hours.
  6. Preheat the oven to 180°C (approximately 350°F). Roll the chilled dough into balls about 1-1.5 tablespoons each and place on a baking sheet.
  7. Bake for 10-12 minutes or until the edges are just set. Allow the cookies to rest on the pan for 3-5 minutes, then transfer to a wire rack to cool completely.
