Cranberry Oat Cookies
Deliciously chewy cranberry oat cookies with bits of white chocolate, perfect for a sweet snack.

Ingredients
- 0.5 cup butter soft
- 1 cup sugar
- 1 egg
- 1.5 tsp vanilla extract
- 0.5 tsp salt
- 1 tsp baking powder
- 0.75 tsp cinnamon
- 0.75 cup all purpose flour
- 1.5 cup oats
- 0.5 cup white chocolate chopped
- 0.75 cup dried cranberries
Instructions
- In a large bowl, cream together the soft butter and sugar until the mixture becomes light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Add the salt, baking powder, and cinnamon, followed by the flour. Mix until just combined and no streaks remain.
- Gently fold in the oats, white chocolate, and dried cranberries by hand.
- Chill the dough in the refrigerator for at least 2 hours.
- Preheat the oven to 180°C (approximately 350°F). Roll the chilled dough into balls about 1-1.5 tablespoons each and place on a baking sheet.
- Bake for 10-12 minutes or until the edges are just set. Allow the cookies to rest on the pan for 3-5 minutes, then transfer to a wire rack to cool completely.
