Honey Glazed Salmon with Mango Avocado Salsa

Ingredients
- 1.5 lbs salmon filet cut into 1 inch cubes
- 1 mango peeled, pitted, and diced
- 1 avocado peeled, pitted, and diced
- 1 jalapeno finely diced
- 0.25 cup fresh cilantro chopped
- 1 garlic clove pressed
- 4 tbsp lime juice
- 0.25 cup red onion diced
- 0.5 tsp kosher salt
- 3 tbsp soy sauce
- 1 tbsp rice wine vinegar
- 0.5 tsp garlic powder
- 0.5 tsp onion powder
- 0.5 tsp kosher salt
- 0.25 tsp ground pepper
- 1 tbsp sesame oil
- 1 inch fresh ginger grated
- 3 garlic cloves pressed
- 0.25 cup liquid honey
- 1 tsp kosher salt
- 0.5 tsp ground pepper
- 0.75 tsp garlic powder
- 2 tbsp extra virgin olive oil
- 1 cup Jasmine rice cooked
- 0.5 English cucumber sliced thin
Instructions
- Remove the skin from the salmon filets and cut them into 1 inch cubes.
- Prepare the salsa by combining mango, avocado, jalapeno, cilantro, garlic, lime juice, red onion, and salt in a bowl.
- In a bowl, whisk together soy sauce, rice wine vinegar, garlic powder, onion powder, kosher salt, pepper, sesame oil, grated ginger, pressed garlic, and honey to make the glaze.
- Season the salmon with salt, pepper, and garlic powder.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the salmon cubes and sear on each side for 2-3 minutes until cooked through.
- Cook 1 cup of Jasmine or white rice as per package instructions.
- To serve, place a bed of warm rice in a bowl, add the salmon cubes, mango avocado salsa and sliced cucumber. Drizzle with the honey glaze.
