Honey Glazed Salmon with Mango Avocado Salsa

Ingredients

  • 1.5 lbs salmon filet cut into 1 inch cubes
  • 1 mango peeled, pitted, and diced
  • 1 avocado peeled, pitted, and diced
  • 1 jalapeno finely diced
  • 0.25 cup fresh cilantro chopped
  • 1 garlic clove pressed
  • 4 tbsp lime juice
  • 0.25 cup red onion diced
  • 0.5 tsp kosher salt
  • 3 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp kosher salt
  • 0.25 tsp ground pepper
  • 1 tbsp sesame oil
  • 1 inch fresh ginger grated
  • 3 garlic cloves pressed
  • 0.25 cup liquid honey
  • 1 tsp kosher salt
  • 0.5 tsp ground pepper
  • 0.75 tsp garlic powder
  • 2 tbsp extra virgin olive oil
  • 1 cup Jasmine rice cooked
  • 0.5 English cucumber sliced thin

Instructions

  1. Remove the skin from the salmon filets and cut them into 1 inch cubes.
  2. Prepare the salsa by combining mango, avocado, jalapeno, cilantro, garlic, lime juice, red onion, and salt in a bowl.
  3. In a bowl, whisk together soy sauce, rice wine vinegar, garlic powder, onion powder, kosher salt, pepper, sesame oil, grated ginger, pressed garlic, and honey to make the glaze.
  4. Season the salmon with salt, pepper, and garlic powder.
  5. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the salmon cubes and sear on each side for 2-3 minutes until cooked through.
  6. Cook 1 cup of Jasmine or white rice as per package instructions.
  7. To serve, place a bed of warm rice in a bowl, add the salmon cubes, mango avocado salsa and sliced cucumber. Drizzle with the honey glaze.
