Steak Salad With Chimichurri Dressing
This steak salad only has a few ingredients but the fresh flavors of the chimichurri dressing really pack a punch and deliver on flavor. Perfect for meal prep or an easy weekday dinner.

Ingredients
- 6 pieces small cucumbers
- 0.5 pieces red onion
- 1 lb cooked steak
- 0.5 cup chopped parsley
- 0.25 cup chopped cilantro
- 0.33 cup olive oil
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.5 tsp oregano
- 0.5 tsp red pepper flakes
- 3 cloves garlic
- 1 whole lemon
- 2 cups cherry tomatoes
- 0.5 cup feta cheese
Instructions
- Slice 6 small cucumbers and set aside.
- Slice 1/2 red onion and set aside.
- Cut 1lb of cooked steak into bite-sized pieces and set aside.
- In a bowl, combine 1/2 cup chopped parsley, 1/4 cup chopped cilantro, 1/3 cup olive oil, 1/2 tsp salt, 1/4 tsp black pepper, 1/2 tsp oregano, 1/2 tsp red pepper flakes, 3 cloves of minced garlic, and the juice of 1 lemon to make the chimichurri dressing.
- Mix the chimichurri dressing thoroughly in the bowl.
- In a large bowl, combine the sliced cucumbers, 2 cups of cherry tomatoes, sliced red onion, and bite-sized steak pieces.
- Pour the chimichurri dressing over the salad ingredients in the large bowl.
- Toss the salad gently to ensure all ingredients are coated with the dressing.
- Sprinkle 1/2 cup of feta cheese over the salad.
- Serve the salad immediately or store in the refrigerator for meal prep.
