Steak Salad With Chimichurri Dressing

Ingredients

  • 6 pieces small cucumbers
  • 0.5 pieces red onion
  • 1 lb cooked steak
  • 0.5 cup chopped parsley
  • 0.25 cup chopped cilantro
  • 0.33 cup olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp oregano
  • 0.5 tsp red pepper flakes
  • 3 cloves garlic
  • 1 whole lemon
  • 2 cups cherry tomatoes
  • 0.5 cup feta cheese

Instructions

  1. Slice 6 small cucumbers and set aside.
  2. Slice 1/2 red onion and set aside.
  3. Cut 1lb of cooked steak into bite-sized pieces and set aside.
  4. In a bowl, combine 1/2 cup chopped parsley, 1/4 cup chopped cilantro, 1/3 cup olive oil, 1/2 tsp salt, 1/4 tsp black pepper, 1/2 tsp oregano, 1/2 tsp red pepper flakes, 3 cloves of minced garlic, and the juice of 1 lemon to make the chimichurri dressing.
  5. Mix the chimichurri dressing thoroughly in the bowl.
  6. In a large bowl, combine the sliced cucumbers, 2 cups of cherry tomatoes, sliced red onion, and bite-sized steak pieces.
  7. Pour the chimichurri dressing over the salad ingredients in the large bowl.
  8. Toss the salad gently to ensure all ingredients are coated with the dressing.
  9. Sprinkle 1/2 cup of feta cheese over the salad.
  10. Serve the salad immediately or store in the refrigerator for meal prep.
