Creamy Salmon Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 leek sliced
  • 0.5 teaspoon salt
  • 250 grams potatoes bite-sized, preferably baby potatoes
  • 1 carrot cut into chunks
  • 500 ml water
  • 1 cube fish broth cube
  • 400 grams salmon cut into chunks
  • 1 from one lemon lemon zest
  • 1 bunch dill chopped
  • 100 ml cream
  • 1 teaspoon corn starch
  • 1 tablespoon hot water
  • 0 salt to taste
  • 0 black pepper to taste
  • 0 lemon juice freshly squeezed

Instructions

  1. Heat a tablespoon of olive oil in a large pot. Sauté the leeks with a pinch of salt for 2-3 minutes until softened.
  2. Add the potatoes, carrots, water, and fish broth cube to the pot. Simmer for about 10 minutes, or until the vegetables are almost tender.
  3. Gently stir in the salmon, lemon zest, dill, and cream. Bring to a boil, then reduce the heat and simmer for 5 minutes, until the fish is perfectly cooked.
  4. Mix corn starch with 1 tablespoon of hot water, then stir it into the soup to thicken slightly. Season with salt and pepper to taste.
  5. Ladle into bowls, squeeze in fresh lemon juice, and enjoy!
