Chicken in Creamy Cilantro Sauce

Ingredients
- 0 cups water
- 500 grams chicken breast boneless, cut into cubes
- 2 bay leaf
- 0 teaspoons sea salt
- 0 teaspoons black pepper
- 0.5 white onion optional, chopped
- 1 cup chicken broth reserved from cooking
- 1 bunch cilantro large, preferably without stems
- 180 grams cream cheese
- 2 lemons lemon juice
- 1 tablespoon vegetable seasoning vegetable
- 0.25 cup sour cream
- 45 grams salted butter
- 0 cooked chicken pieces
- 0 cilantro sauce
Instructions
- Fill a large pot with water and place it on medium heat. Allow it to come to a boil.
- Cut 500 grams of boneless chicken breast into medium cubes. Once the water is boiling, add the chicken cubes, 2 bay leaves, sea salt, and freshly ground black pepper. Optionally, add 1/2 white onion.
- Simmer the chicken on low heat with the lid on until fully cooked. Remove the chicken from the water and set it aside. Reserve 1 cup of the chicken broth.
- In a blender, combine a large bunch of cilantro (preferably without stems), 1 cup of reserved chicken broth, 180 grams of cream cheese, juice from 2 lemons, 1 tablespoon of vegetable seasoning, 1/4 cup of sour cream, sea salt, and black pepper. Blend until smooth.
- Melt 45 grams of salted butter in a pan over medium heat. Add the cooked chicken pieces and brown them slightly.
- Pour the cilantro sauce into the pan with the chicken. Stir and cover. Continue cooking on medium-low heat, stirring occasionally, until the sauce starts to bubble gently.
