Chicken in Creamy Cilantro Sauce

Ingredients

  • 0 cups water
  • 500 grams chicken breast boneless, cut into cubes
  • 2 bay leaf
  • 0 teaspoons sea salt
  • 0 teaspoons black pepper
  • 0.5 white onion optional, chopped
  • 1 cup chicken broth reserved from cooking
  • 1 bunch cilantro large, preferably without stems
  • 180 grams cream cheese
  • 2 lemons lemon juice
  • 1 tablespoon vegetable seasoning vegetable
  • 0.25 cup sour cream
  • 45 grams salted butter
  • 0 cooked chicken pieces
  • 0 cilantro sauce

Instructions

  1. Fill a large pot with water and place it on medium heat. Allow it to come to a boil.
  2. Cut 500 grams of boneless chicken breast into medium cubes. Once the water is boiling, add the chicken cubes, 2 bay leaves, sea salt, and freshly ground black pepper. Optionally, add 1/2 white onion.
  3. Simmer the chicken on low heat with the lid on until fully cooked. Remove the chicken from the water and set it aside. Reserve 1 cup of the chicken broth.
  4. In a blender, combine a large bunch of cilantro (preferably without stems), 1 cup of reserved chicken broth, 180 grams of cream cheese, juice from 2 lemons, 1 tablespoon of vegetable seasoning, 1/4 cup of sour cream, sea salt, and black pepper. Blend until smooth.
  5. Melt 45 grams of salted butter in a pan over medium heat. Add the cooked chicken pieces and brown them slightly.
  6. Pour the cilantro sauce into the pan with the chicken. Stir and cover. Continue cooking on medium-low heat, stirring occasionally, until the sauce starts to bubble gently.
