Spinach & Pepper Egg White Bites

Ingredients
- 1 red pepper chopped
- 1 cup chopped spinach diced
- 1.5 cups liquid egg whites
- 0.25 cup low-fat cottage cheese
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper freshly ground
- 0.5 teaspoon garlic powder
- 0.5 cup low-fat mozzarella shredded
Instructions
- Preheat your oven to 350°F.
- Chop the red pepper into small pieces and dice the spinach.
- Blend the egg whites, low-fat cottage cheese, salt, pepper, and garlic powder until smooth.
- Grease a muffin tin and fill each cup with the egg mixture about halfway.
- Divide the red pepper and spinach evenly among the cups.
- Sprinkle optional low-fat mozzarella on top if using.
- Bake in the oven for 20-25 minutes or until the bites are firm and slightly golden.
- Let cool for a few minutes before removing from the muffin tin. Serve warm or store in the fridge for later.
