Spinach & Pepper Egg White Bites

Ingredients

  • 1 red pepper chopped
  • 1 cup chopped spinach diced
  • 1.5 cups liquid egg whites
  • 0.25 cup low-fat cottage cheese
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper freshly ground
  • 0.5 teaspoon garlic powder
  • 0.5 cup low-fat mozzarella shredded

Instructions

  1. Preheat your oven to 350°F.
  2. Chop the red pepper into small pieces and dice the spinach.
  3. Blend the egg whites, low-fat cottage cheese, salt, pepper, and garlic powder until smooth.
  4. Grease a muffin tin and fill each cup with the egg mixture about halfway.
  5. Divide the red pepper and spinach evenly among the cups.
  6. Sprinkle optional low-fat mozzarella on top if using.
  7. Bake in the oven for 20-25 minutes or until the bites are firm and slightly golden.
  8. Let cool for a few minutes before removing from the muffin tin. Serve warm or store in the fridge for later.
